Nitrogen steel

Almost all the blades manufatured by Ambrogio Sanelli are made in Nitro-B, cutting-edge technology stainless steel specifically developed to increase cutting power. The very specific amount of Nitrogen, Carbon, Chromium, Molibdenun and Vanadium makes our knives the perfect hardness, long-lasting edge, corrosion-resistant properties and excellent cutting power.

Nitrogen (N) – at least 0,1%

Added instead of additional carbon for the steel matrix, Nitrogen atoms works in a similar way of the carbon but offers unusual advantages in corrosion resistance, keeping hardness and cutting power high.

Carbon (C) – 0,5%

Carbon creates hardness, needed to increase edge retention and raises tensile strength.

Chromium (Cr) – 14,5%

Chromium content increases corrosion resistance and toughness.

Molybdenum (Mo) – 0,7%

Increases localized corrosion resistance, strength and machinability.

Vanadium (V) – 0,15%

Reducing the grain size, increases strength and wear resistance for a better
cutting edge.
TECHNOLOGY

Lab tests

The hardness tester allow us to check that the specific heat treatment that we internally perform has been made in the correct way, being a critical phase for the properties of our material and for the hardness of the steel, key-factor in cutting performances. This equipment is used for R&D purpouses as well as for continuos in-process control.

The cutting angle and the geometry of the section of the edge are other important factors strictly related to the material, hardness and use of the knife. The LASER GONIOMETER enable us to check all the sharpening-affecting production steps as well as to test, in R&D projects, several different geometries to pursue the best performance for every knife.

The roughness of the blade is a parameter related to the surface finishing and polishing of the blade, and thus to all the connected technical factors, including oxidation. The Roughness tester enable us to check that all our production sits in between our high quality control criteria.

We are able to measure in a standard ISO-Certified way the cutting power of a blade. This is obviously the key-factor and the Edge Tester is a complex machine that provides a lot of useful data for a passionate R&D activity.

Sharpness duration is a primary feature for the knife user and requires a dedicate designed equipment to be tested. Our Edge Tester enables us to simulate a life-cycle of a knife to understand all the dynamic related to blade and sharpness geometry over time, according to specific ISO Standards.

Certified quality

All our products comply with UE regulations requested for items to be in contact with food products and they are perfectly suitable for food industry, as per EC No 1935/2004 Regulation of the European Parliament and of the Council of 27 October 2004 on articles intended to come into contact with food and repealing Directives 80/590/EEC and 89/109/EEC. Ambrogio Sanelli is a company ISO 22000 – Food safety management systems – certified, operating then following strict quality standards specifically developed for food-safety matters to assure the final users an always safer product, a tracking system and a continuos quality control.

Knives of our professional ranges SUPRA (black handle) and SUPRA COLOR (colored handles) are tested and certified by NSF International.
NSF International, a US organization, is the world leader in standards development and product certification for public health and safety; one important field of NSF’s interest are products that come into contact with food. The registered NSF Certification Mark, now present on the knives of our professional Supra and Supra Colore lines, confirms that NSF has assessed and certified its conformity with the relevant NSF/ANSI standard.
